Frozen Banana Nut Snacks

I don't know about your house, but in my house, husband and boy spend lots of time looking for snacks in the evenings and weekends. It is much easier to fight this battle with nutritious snacks on hand. I am happy to point them to these frozen treats, which are very easy to make and very tasty as well. We always have a bag in our freezer. If you make them small enough, they are bite-sized and quite handy even without toothpicks.
 


Ingredients:
About 2 bananas
A handful of chopped nuts (1/4 to 1/2 cup approximately)
A handful of shredded dried coconut (about 1/4 to 1/2 cup approximately) - no sugar added
Enough coconut oil to cover the bananas (approximately a couple of tablespoons)

How To:
1. Prep Bananas: Peel and cut bananas into one or two inch chunks. Line a plate or platter with wax paper (to keep bananas from sticking). In addition, cover bananas with coconut oil. Set aside.

2. Topping: Chop nuts and mix with shredded coconut in a shallow bowl. If you make too much of the mix for the bananas you have, simply store in a small baggie for your next batch.

3. Combine: Roll bananas into mixture and cover completely, pressing gently.  Set aside on plate until all are done. Freeze (plate and all) for a few hours, then remove and store in a baggie.

Comments: These are a really great snack. Fast and easy, a great way to satisfy an urge for something sweet. Insert toothpicks if desired. Picture below is pre-freezing. Picture above is post-freezing. I included the last picture below, even though it's not a very good picture, to show that chia seeds, which are tasteless, were added to the coconut/ nut mixture for a nutrition bonus.
