Tostadas

This is one of our favorite meals and one of the reasons is that I am ususally just a "helper" as this is my husband's recipe and, in fact, one of the things he made me before we got married (like, to "woo" me, and I guess it worked!).


 
Ingredients:
4-6 tortillas, corn or flour is fine, we really like these and are meaning to try these
Approx 3 cups of refried beans, try this recipe
Half a head or bunch of lettuce, any type, sliced finely (shredded)
1 to 1 1/2 cups grated cheese, we like this raw milk cheddar with jalepenos
1 tomato, diced
1/2 onion, diced (or 4-5 green onions)
1 lb ground beef, we like this
Salsa
Lard for frying tortillas, we like this
Optional garnishes such as sour cream, black olives, jalepenos, and/ or avocado

How To:
1. In a large frying pan, heat lard over medium to medium-high heat. In the meantime, brown ground beef in another, smaller pan and warm up refried beans in a small to medium saucepan. Add a little salsa, and/ or fat from ground beef, and/ or lard to flavor, but not too much (you don't want them really runny). Stir to mix and cook over medium to medium low heat. Once they are cooked through, lower heat to low and stir occasionally. Once the ground beef is browned and crumbly, lower heat to low and stir occasionally.

2. Chop the lettuce, tomato, onion, and grate the cheese. Place in little bowls for "self-service".

3. Fry the tortillas in the lard until they are golden brown and then set aside on a plate lined with paper.

4. Combine - layer beans, meat, cheese, and the other ingredients on top of each crispy tortillas shell. Top with optional garnishes and salsa.

 
Comments:
This takes about 20 minutes prep and it is usually easier if you have a helper since there is a lot going on. My husband will generally do the tortillas, ground beef, and beans and I will chop the lettuce, onions, and tomatoes, and then we typically finish up about the same time. This serves 4-6 people, depending on the size of the tortillas used.
